Description

Inspired by the Pallipalayam style of western Tamil Nadu, this dry chicken preparation is slow-tossed with shallots, dried red chillies and curry leaves until the masala clings to every piece. Dark, rustic and full of heat.

A good starter to share, and a great match for briyani, fried rice or parotta.
